The ancient city of Sana'a, and specifically, Bab al Yemen—the iconic gate that leads to the old city—boasts a rich culinary tradition that stems from centuries of historical and cultural interchange. Yemeni cuisine has been influenced by the spices of India, the cooking techniques of the Ottoman Empire, and the food staples of East Africa.
