Food History of Muradiye Complex, Bursa, Turkey

The Muradiye Complex (Muradiye Külliyesi) is not only a historical landmark in Bursa but also an area where you can explore the rich culinary traditions of the Ottoman era. The complex itself is a collection of structures built during the reign of Sultan Murad II in the 15th century. Throughout Ottoman times, royal kitchens, known as "Matbah," played a crucial role in the development of Turkish cuisine, and Bursa was one of the Anatolian cities that benefited from this cultural and gastronomic development. The cuisine around Muradiye Complex has been influenced by the court cooking, which included a wide variety of food reflecting the multicultural empire. The Ottoman Palace cuisine introduced sophisticated flavors and dishes made with lamb, chicken, fresh vegetables, and herbs, while avoiding the consumption of beef.
