Food History of Bolan Pass, Quetta, Pakistan

The Bolan Pass is a mountain pass through the Toba Kakar Range of Balochistan province in western Pakistan. Historically, it has been a crucial gateway between the South Asian subcontinent and Central Asia, serving as a strategic trade route for caravans and military campaigns. The food of Quetta, which lies near the Bolan Pass, is influenced by the history of cultural exchanges along this route. The cuisine here predominantly features Pashtun and Balochi flavors, with influences from Persian, Afghan, and South Asian culinary traditions.

Culinary practices in the region have been shaped by the arid climate, nomadic lifestyle, and the rugged terrain, leading to a dominance of meat-based dishes, particularly lamb and chicken, grains like wheat, and a plethora of rich, hearty flavors.
