Food History of Karak, Jordan

The food culture in Karak, as in the broader Jordanian context, is part of a rich historical fabric that weaves together influences from the Levant, North Africa, and the Arabian Peninsula. This region's cuisine has been shaped by centuries of trade, migration, and the exchange of culinary practices. Historically, Karak was known for its strong defensive position and its castle, which played a significant part during the Crusades. The city's position along ancient trade routes meant that it was influenced by both the spices and ingredients that passed through it and the local pastoral and agricultural lifestyle.

Local dishes in Karak often feature grains and pulses, olives and olive oil, vegetables, and meats like chicken and lamb. While lamb is quite popular in Jordanian cuisine, Karak also boasts a variety of dishes that cater to vegetarians. What is particularly celebrated in Karak is the traditional style of cooking known as Mansaf, which is considered the national dish of Jordan.
