Khndzoresk is a historic cave village, located near the town of Goris in Armenia. The food history of this area is deeply rooted in Armenian culinary traditions, which have been influenced by the various civilizations that have passed through the region. The inhabitants of the cave village used to live a pastoral life, and much of their diet depended on agriculture and livestock (excluding cattle due to your restriction). They cultivated grains, vegetables, and fruits, and made cheese and yogurt from sheep and goat milk. Over time, these traditional techniques and recipes have been passed down through generations, keeping the authentic taste of Armenian cuisine alive.
