Must-Try Foods In Merv (Turkmenistan) For Tourists 2026 - 2027

Food History of Merv, Turkmenistan

The ancient city of Merv, located in what is now Turkmenistan, has a rich and diverse history that dates back over 2,500 years. Once a major oasis city on the Silk Road, Merv has been influenced by the many different cultures and peoples that passed through or conquered the region, such as Persians, Arabs, Turks, and Mongols. This confluence has created a unique culinary tradition that blends Persian, Central Asian, and Middle Eastern flavors.

Traditional Turkmen cuisine is known for its variety of meats, dairy products, grains, and vegetables. However, given the historically nomadic lifestyle of the Turkmen people and the challenging desert environment, the diet was heavily meat-centric, with camel, sheep, and chicken comprising the primary proteins. With the introduction of agriculture, more vegetables, fruits, and grains became staples of the diet.

In the absence of beef, there is a strong reliance on other meats, including mutton and chicken. Over time, local cooks have perfected techniques of baking, boiling, and stewing to create hearty dishes that can withstand the extreme climate of the region.
