Food History of Royal Palace Ayutthaya, Ayutthaya, Thailand

The Royal Palace in Ayutthaya, known as the Ban Plai Luang, once stood as the magnificent residence of the Siamese kings during the Ayutthaya period, thriving from the 14th to the 18th centuries. The cuisine from this period was influenced by many foreign traders, including the Portuguese, Dutch, Japanese, and Chinese. Traditional Thai flavors blended with international influences to create a unique culinary experience. Royal cuisine was especially sophisticated, with a focus on quality ingredients, intricate preparation, and artful presentation.

Despite the destruction of the palace in 1767 by the Burmese, many traditional recipes survived and are still important in Thai cuisine today. These dishes are a testament to the opulent cultural and culinary heritage of Ayutthaya.
