Food History of Gardens of Babur, Kabul, Afghanistan

The Gardens of Babur, locally known as Bagh-e Babur, have a rich and varied history that includes not only the flora and architecture but also the culinary customs associated with the Mughal era. Established in the early 16th century by the first Mughal emperor, Babur, after he captured Kabul, the gardens were a place of leisure, relaxation, and festivities. Mughal cuisine, known for its richness and aromatic spices, would have featured prominently in feasts and picnics held within these royal gardens.

Although originally Persianate in style, the cuisine evolved over the centuries with Central Asian, Indian, and Afghan influences. The use of fresh fruits and vegetables from the garden's own orchards and the surrounding fertile land of Kabul would have played a significant role in the diets of courtiers and visitors. With the importance of hospitality in Afghan culture, a variety of fragrant and flavorful dishes would be served to honor guests.
