Kanazawa, known for its well-preserved Edo-era districts, is also a city rich in culinary heritage. Much of this history is tied to its geography; situated by the Sea of Japan, Kanazawa has access to fresh seafood, while its fertile Kaga Plains provide an abundance of rice and vegetables. The city was home to the powerful Maeda clan, who promoted culture and the arts, including the culinary arts. Thus, Kaga cuisine (also known as Kaga ryori), which emphasizes seasonality and artistry, developed here. Kanazawa is also renowned for its traditional Japanese confectionery (wagashi), thanks to its tea ceremony culture.
