Food History of Sevan National Park, Sevan, Armenia

The Sevan National Park, located in the picturesque lands of Armenia surrounding Lake Sevan, is steeped in cultural heritage, including its food traditions. The cuisine here is largely influenced by the fresh bounty offered by the lake itself, particularly with dishes centered around fish, such as the prized Sevan trout, known locally as "Ishkhan." Armenian cuisine is also characterized by a rich use of grains, vegetables, and fruits, owing to the fertile lands and a climate favorable to agriculture. While meat dishes are popular in Armenian culture, there are numerous vegetarian dishes influenced by the various historical periods, including influences from the Middle East and the Mediterranean.
