The Duomo, Florence, Italy - Food History

The area around The Duomo in Florence, Italy, is not only famous for its stunning cathedral and rich history but also for its culinary heritage. Florence is the capital of Tuscany, a region renowned for its cuisine that emphasizes fresh, high-quality ingredients. Historically, the food in this area is rooted in 'cucina povera' or peasant cooking, which means making simple meals using whatever is available seasonally. The Tuscan bread, for example, is known for being saltless due to a historic salt tax, which has influenced the way Florentine dishes are prepared and seasoned.

Over time, the riches of the Renaissance brought a refinement to Florentine cuisine, with a focus on elaborate presentation and the blending of sweet and savoury flavours. Many of the dishes enjoyed today reflect this blend of the rustic and the sophisticated, embodying Florentine history in every bite.
