Food History of Safed (Tzfat), Israel

Safed, known in Hebrew as Tzfat, is a city with a rich history that extends to its culinary traditions. As a city of Kabbalistic mysticism, Jewish spirituality has significantly influenced its food culture. Over the centuries, Tzfat has seen a variety of cultural influences due to the presence of Sephardic Jews from Spain, Ashkenazi Jews from Europe, and more recently, immigrants from North Africa and the Middle East. This melting pot of traditions has created a unique blend of flavors and dishes.

Foods traditionally associated with Jewish culture, such as challah bread, borekas, and various Middle Eastern dishes, are all integral parts of Tzfat's food scene. Additionally, the city has embraced a wide array of vegetarian and dairy dishes, in line with kosher dietary laws that hold special significance in this spiritual center. The city’s elevation and cooler climate also contribute to the growth of lush produce, which plays a vital role in crafting fresh and healthy meals.
