Food History of Yukhari Govhar Agha Mosque, Shusha, Azerbaijan
The Yukhari Govhar Agha Mosque in Shusha has been an important spiritual center for centuries, and alongside its religious significance, it has witnessed the rich culinary traditions of Azerbaijan. It is located in a region renowned for its cultural diversity and complex history, both of which are reflected in its cuisine. Shusha's food is a tapestry of Persian, Turkish, and Central Asian influences, which come together to create a distinct Azeri gastronomy. The local produce and livestock, combined with the historical silk road spices, contribute to the city's robust flavors. Historically, food served around the mosque and the city would have accommodated a variety of palates, avoiding pork due to Islamic dietary laws, and emphasizing the use of lamb, chicken, and a rich variety of vegetables and herbs.
