The culinary history of Chittorgarh is as majestic as its fabled forts and heroic tales. Rooted deeply in the arid lands of Rajasthan, the cuisine of Chittorgarh reflects the warrior lifestyle and the austere living conditions of the past. The food here has been influenced by the scarcity of water and fresh green vegetables. Hence, the local dishes use lots of milk, buttermilk, and clarified butter (ghee) instead of water and place an emphasis on preserved foods that can be easily stored. Most traditional dishes are vegetarian, in line with the predominant vegetarian ethos of the region influenced by Jainism and Vaishnavism.
Please note that while vegetarian dishes are the mainstay of Chittorgarh's cuisine, non-vegetarian dishes like Laal Maas are also a part of the culinary heritage and are enjoyed by many, although respecting local sentiments and laws, dishes involving cow meat are not served here due to cultural and religious reasons.
