The city of Sinuiju, situated on the border with China, has a culinary tradition that is influenced by both Korean and Chinese cuisines. As with other parts of the Democratic People's Republic of Korea (DPRK), the food history of Sinuiju is rich with dishes that make use of the region's agricultural produce. North Korean cuisine, in general, tends to be less spicy than that of South Korea, with an emphasis on the natural flavors of the ingredients. The diet of Sinuiju traditionally includes grains such as rice and corn, vegetables, and a variety of proteins, excluding cow meat, as requested. Kimchi, a fermented vegetable dish often made with cabbage and radishes, is a staple throughout the country, including in Sinuiju.
