Food History of Dechen Phodrang, Thimphu, Bhutan

The cuisine of Dechen Phodrang, like the rest of Bhutan, is heavily influenced by the country's geography and climate. Bhutan's mountainous terrain and the Buddhist cultural practices have shaped the food habits of its people. Bhutanese cuisine traditionally features a limited use of meat due to Buddhist principles, focusing instead on dairy, cereals like red rice, and a variety of vegetables. However, with Dechen Phodrang being a major monastic school and cultural destination within Thimphu, the diet here is still predominantly vegetarian, emphasizing dishes that incorporate a vibrant array of locally grown vegetables and dairy products.
