Food History of Kozhikode, Kerala, India

Kozhikode, also known as Calicut, has a rich culinary history embedded in the Malabar coast's traditions. The city's gastronomy has been influenced by Arab, Brahmin, Zamorin, and Christian cultures. Historically, it was a prominent trade center where Arab traders introduced their cuisine. The famous spice trade brought different cultures to Kozhikode, enriching its culinary heritage. Spices such as black pepper, cardamom, and cloves, which are abundant in this region, play a significant role in the local cuisine.

Apart from spices, Kozhikode is famous for its variety of sweets, especially the halwas. This confection, made from fruits, nuts, and flour, shows the influence of Middle Eastern cuisine. Another historically significant event is the arrival of the Portuguese explorer Vasco da Gama, which contributed to the introduction of new ingredients like potatoes, tomatoes, and chilies into the traditional cuisine of Kozhikode.
