Must-Try Foods In Jaisalmer (Rajasthan) For Tourists 2026 - 2027

Food History of Jaisalmer, Rajasthan, India

Jaisalmer, a city in the heart of the Thar Desert, is renowned for its rich cultural heritage, which extends to its unique cuisine. The food history of Jaisalmer is deeply influenced by the arid climate and the lifestyles of its inhabitants, including the Rajput warriors and the local merchants. The traditional cuisine here is characterized by the use of local ingredients such as bajra (pearl millet), sangri (a type of bean), and ker (a wild berry), which are well-suited to the harsh desert conditions.

Since water is scarce, the cooking techniques in Jaisalmer have evolved to use minimum water and instead rely on more milk, buttermilk, and ghee (clarified butter) which is evident in their rich and hearty dishes. Due to religious beliefs and cultural practices, the majority of Jaisalmer's traditional food is vegetarian, with a strong emphasis on lentils, legumes, and local vegetables.
